Finely slice the fresh pumpkin into thin strips; fry them in hot oil (150°C) until they are crispy. Blanch the fresh broad beans for a few minutes and then toss them with butter and pink peppercorns. Melt some grated Montasio PDO cheese separately in a glass of cream. Blanch the fillet in the pan on both sides according to taste.
Arrange the pumpkin chips at the centre of the plate, lay the fillet of beef garnished with the cream of Montasio PDO and decorate with broad beans.
