250 g quinoa or pearled barley
150 g Monte Veronese PDO
oil, salt, pepper to taste
a sprig of parsley
Preparation time: 5 min
Cooking time: 15 min
Boil the quinoa or barley in salted water; cut into very small pieces the tomato and cucumber; mix it all with the diced Monte Veronese PDO; season with oil, salt and pepper.
Serve in glasses garnished with a sprig of parsley.
