400 g of Fresh Piave PDO
2 heads of lettuce
4 ripe tomatoes
extra virgin olive oil
the juice of one lemon
a few basil leaves
salt, pepper to taste
Preparation time: 15 min (and 1 h in the fridge)
Get rid of any bad lettuce leaves then, wash the rest and dry them. Toss the Piave Fresco PDO with a pinch of salt and pepper, the juice of the lemon and oil in a bowl. Wash and dry 2 tomatoes, remove the seeds and dice.
Work the cheese by hand to obtain a soft dough. Stuff the leaves by adding the diced tomato alternating these into a pie, dry them in kitchen paper, wrap them in tin foil and tighten securely. Store in the refrigerator for at least one hour.
Prepare a sauce with the two tomatoes left by passing them through a sieve, after having thoroughly wrung them, and add olive oil, salt, pepper and cider vinegar. Cut the lettuce into 4 or 5 parts and add the sauce.
